Ingredients For chicken lombardy

8 ozsliced mushrooms

2 Tbspbutter
-
4boneless skinless chicken thighs

1/2 cflour
-
1/3 cbutter
-
1/2 cchicken stock
-
1/3 cmarsala wine
-
1/2 Tbspcornstarch mixed with 1 tbsp water

1/2 ceach fresh grated parmesan and mozzarella cheese

2green onions chopped
-
salt and pepper
How To Make chicken lombardy

1Add the 2 tbsp butter to a large skillet. Add the mushrooms and saute until tender about 5 minutes. Remove and set aside.

2Add the butter to the same skillet. Once melted dredge the chicken in the flour and cook until the chicken is browned on both sides. Remove chicken to a oven safe baking dish. Top with the mushrooms.

3Add the wine to the pan with the chicken broth. scrap up all the bits from the bottom of pan. Bring to a boil. Whisk the cornstarch mixture into the broth. Cook until thickened. Taste and season with salt and pepper.

4Pour the sauce over the chicken and mushrooms. Place in a 450 degree oven. Bake 10 minutes. Top with cheeses and bake until cheese is melted about another 5 minutes. Top with green onions.
