Ingredients
- olive oil
- 2 ounces pancetta
- 6 ounces chicken livers, sinew removed and chopped
- 1 teaspoon flour
- salt and pepper, to taste
- nutmeg, to taste
- 1/4 cup sherry
- 1/4 cup chicken stock
- 1/4 cup plus 1 Tbsp heavy cream, divided
- 1 egg yolk
- 4 slices whole wheat bread, toasted
- micro greens, for garnish
How To Make chicken livers on toast

Step 1Cook the pancetta until crisp. Add the chicken livers and olive oil. Cook about 5 minutes. Sprinkle flour over the livers; stir. Season with salt, pepper, and nutmeg.

Step 2Add the sherry and let evaporate. Add the chicken stock and cook 3 minutes. Add the 1/4 cup heavy cream. Beat the egg yolk with the remaining heavy cream and whisk into the mixture.

Step 3Spoon onto toast and garnish with micro greens.
