Ingredients
- 4 leg quarters
- salt and pepper
- 2 tablespoons soy sauce
- 1 tablespoon red miso
- 1/2 cup orange juice
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 8 ounces shiitake mushrooms
- 1/2 cup bourbon
How To Make chicken leg quarters with bourbon and miso

Step 1Season the chicken with salt and pepper. In a small bowl, whisk together the soy sauce, Miso, and orange juice and set aside.

Step 2Add oil to a Dutch oven. Place the legs skin side down and cook about 5 minutes. Turn and cook another 5 minutes. Remove the chicken to a plate.

Step 3Add the onions and cook until softened. Add the garlic and cook 1 minute. Add the bourbon and reduce for 5 minutes. Add the orange juice mixture.

Step 4Add the chicken back into the pan. Cover and simmer for 30 minutes.

Step 5Uncover and add the mushrooms. Cook uncovered for about 10 minutes until the mushrooms are cooked, and the sauce is gravy-like.

Step 6Serve the chicken with the gravy sauce on top.
