Ingredients

  • 4 leg quarters
  • salt and pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon red miso
  • 1/2 cup orange juice
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 8 ounces shiitake mushrooms
  • 1/2 cup bourbon

How To Make chicken leg quarters with bourbon and miso

  • Step 1
    Season the chicken with salt and pepper. In a small bowl, whisk together the soy sauce, Miso, and orange juice and set aside.
  • Step 2
    Add oil to a Dutch oven. Place the legs skin side down and cook about 5 minutes. Turn and cook another 5 minutes. Remove the chicken to a plate.
  • Step 3
    Add the onions and cook until softened. Add the garlic and cook 1 minute. Add the bourbon and reduce for 5 minutes. Add the orange juice mixture.
  • Step 4
    Add the chicken back into the pan. Cover and simmer for 30 minutes.
  • Step 5
    Uncover and add the mushrooms. Cook uncovered for about 10 minutes until the mushrooms are cooked, and the sauce is gravy-like.
  • Step 6
    Serve the chicken with the gravy sauce on top.
