This is what I make when I wanted my stepsons help their dad with a project. All I had to say was that their dad needed some help and I was making Jambalaya. They came a running.

Ingredients

  • 3 tablespoons butter, melted
  • 1 - small clove garlic, minced
  • 1 medium green pepper, cleaned and quartered
  • 1 small onion, quartered
  • 1 box pre cooked sausages, partially defrosted
  • 3 cups cooked chicken
  • 2 cups water
  • 1 - bay leaf
  • 1 teaspoon salt
  • 2 cups uncooked rice
  • 1 can (16oz) whole tomatoes

How To Make chicken jambalya

  • Step 1
    Mince garlic in food processor. Add Green pepper. Process 5 minutes. Add to melted butter in pot.
  • Step 2
    Slice onion and sausage in food processor. Add to pot and saute.
  • Step 3
    Chop tomatoes, add to pot. Add chicken, water and seasonings. Bring to boil
  • Step 4
    Stir in rice and cook until rice is tender. Stand 10 minutes and remove bay leaf.
