Ingredients

  • 4 chicken thighs
  • salt and pepper
  • 1/3 cup olive oil
  • 12 cloves garlic sliced
  • 1 small onion chopped
  • 3 tablespoons sherry vinegar
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 1/4 cups chicken stock
  • scallions for garnish

How To Make chicken in vinegar sauce

  • Step 1
    Season the chicken with salt and pepper. Heat the oil and brown the chicken on both sides. Add the sliced garlic and onions. Cook for about 5 more minutes.
  • Step 2
    Remove the chicken and set aside. Add the vinegar and bring to a boil. Boil about 5 minutes. Add the chicken back to pan and pour the chicken stock over top and add the paprika and oregano.
  • Step 3
    Cook until chicken is done. Remove the chicken and set aside. Strain the sauce through a fine mesh strainer and discard the solids. Put the sauce through a fat separator
  • Step 4
    Serve sauce with chicken and garnish with scallions.
