This an awesome recipe from "Simply Thai Cooking". I make this with Basil Beef and Pad Thai when we're having Thai night. So delicious ....this is a really good Thai chicken recipe!!

Ingredients
- 1 pound chicken breasts, boneless and skinless
- 3 cups coconut milk, unsweetened
- 2 tablespoons green curry paste...red is good too...i have used both
- 2 - lime leaves...i used dry as that is all that was available
- 1 cup water
- 3 tablespoons fish sauce
- 1 teaspoon sugar
- 1 cup bamboo shoots
- 1/2 medium red pepper cut into strips
- 2 tablespoons green peas...frozen
- 20 - fresh basil leaves
How To Make chicken in thai green curry

Step 1Slice chicken into strips 1/4 inch thick. Heat 1 cup of the coconut milk in a wok or lge fry pan on high heat until it boils. WATCH CAREFULLY! Add the curry paste and reduce the heat to medium..Stir to dissolve the coconut milk. Add second cup of coconut milk and raise the heat again and let cook for 8 - 10 mins until it thickens. Tear lime leaves into pieces and add to to milk. Turn heat back to med and cook for 2 mins.. Add chicken and turn heat back up again!! Stir and add last cup of coconut milk.Stir-fry for 1 min. Add fish sauce and sugar and co0k til bubbly. Add bamboo shoots and fry for 2 mins, add red pepper and cook 2 mins. Add green peas and 1/4 of the basil leaves. Cook for 1 - 2 mins and serve over steamed rice....so delicious!! If you like Thai food you will love this!!
