Ingredients
- 2 - chicken breasts, halved
- 1 tablespoon oil
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/3 teaspoon pepper
- 1/4 teaspoon paprika
- 1 - onion, finely chopped
- 1 large garlic clove, minced
- 1 cup chicken stock
- 3/4 cup orange juice
- 1 - red bell pepper, sliced
- - rind of orange, grated
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon oregano
- 1 tablespoon lemon juice
- 2 tablespoons chopped parsley
- 4 - orange slices
How To Make chicken in spicy orange sauce

Step 1Skin and debone chicken.

Step 2Heat oil in heavy skillet.

Step 3Combine flour, salt, pepper and paprika and roll chicken in mixture.

Step 4Reserve excess flour.

Step 5Brown chicken in oil.

Step 6Transfer to small baking dish.

Step 7In same oil, saute onion and garlic until soft.

Step 8Sprinkle in any of the flour left over from coating the chicken and stir to blend.

Step 9Stir in the chicken stock and orange juice.

Step 10Add green pepper, orange rind, red peppers, cumin, oregano, lemon juice and parsley.

Step 11Cook until sauce is thick and smooth.

Step 12Pour over chicken.

Step 13Bake, covered at 375 for 40 minutes.

Step 14Garnish with sliced oranges and more chopped parsley.
