Ingredients

  • 2 teaspoons canola oil
  • 1 pound chicken pieces with skin and bones removed
  • 1/2 - onion, chopped
  • 1 - garlic clove, minced
  • 1 pound tomatillos, fresh
  • 3 - green chiles, roasted and chopped
  • 1/2 cup apple juice
  • 1 tablespoon cilantro, fresh and chopped

How To Make chicken in salsa verde

  • Step 1
    Spray a non-stick skillet with vegetable cooking spray.
  • Step 2
    Heat oil and saute chicken then add onion and garlic, stirring until limp.
  • Step 3
    Add remaining ingredients.
  • Step 4
    Reduce heat, cover, and simmer about 15 minutes.
  • Step 5
    NOTE: May substitute 12 ounces of canned tomatillos if you don\'t have fresh.
