2 lb
chicken breast halves, skinless and boneless
1 Tbsp
lemon juice
1/4 c
all purpose flour
1 tsp
1 dash(es)
freashly ground black pepper
3 Tbsp
1 clove
garlic, halved
1/2 c
dry white wine


1/4 c
pan liquid
egg yolks, beaten
1 tsp
snipped parsley
1 tsp
snipped chives
`1/8 tsp
ground nutmeg
salt and pepper to taste
1/2 tsp
lemon juice

How to Make Chicken In Golden Sauce


  • 1Skin and split chicken; rub with lemon juice.
    Mix flour, paprika, pepper, and 1 tsp salt in a paper or plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat well.
  • 2Heat butter and garlic in an electric skillet set at 300 F. Once heated; discard garlic.
  • 3Cook chicken until golden on both side; add wine.
    Cover; reduce heat to 220 F. Simmer 20 minutes or until tender. Uncover; cook an additional 10 minutes or until liquid is reduced to 1/4 cup.
  • 4Remove chicken and reserve 1/4 cup pan liquids. Keep chicken hot in oven
  • 5In sauce pan, combine 1/4 cup pan liquids, 4 beaten egg yolks, 1 cup whipping cream, 1 Tbs each snipped parsley and chives, and 1 tsp ground nutmeg. Season with salt and pepper.
  • 6Cook and stir on low until slightly thickened. Add 1/2 tsp lemon juice.
  • 7Pour sauce over chicken and serve.
