How to Make Chicken In Corn Cream
1Cook chicken in broth with carrot, onion, garlic and peppercorns.
2Add parsley in the last minute.
3Remove chicken and strain broth.
4Take chicken out of bones and cut into bite size pieces.
5Melt butter until it foams.
6Stir in flour to make a blond roux.
7Stir in 1 cup broth along with milk, stirring vigorously until slightly thickened.
8Add drained corn, butter, nutmeg, salt, pepper, cheese and cream.
9Bring to a boil, stirring.
11Arrange chicken in layers alternating with corn cream in a buttered baking dish.
12Sprinkle more cheese on top.
13Bake in 350 oven until bubbling.
14Broil until golden brown.
