Ingredients
- 3 pounds chicken, cut into 8 parts
- 1 can corn
- 2 tablespoons butter
- 6 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 2 tablespoons flour
- 1/2 cup grated parmesan cheese
- 1 - diced carrot
- 1 - onion, diced
- 1 - garlic clove
- 6 - parsley sprigs
- 6 - peppercorns
- - salt to taste
- - nutmeg
How To Make chicken in corn cream

Step 1Cook chicken in broth with carrot, onion, garlic and peppercorns.

Step 2Add parsley in the last minute.

Step 3Remove chicken and strain broth.

Step 4Take chicken out of bones and cut into bite size pieces.

Step 5Melt butter until it foams.

Step 6Stir in flour to make a blond roux.

Step 7Stir in 1 cup broth along with milk, stirring vigorously until slightly thickened.

Step 8Add drained corn, butter, nutmeg, salt, pepper, cheese and cream.

Step 9Bring to a boil, stirring.

Step 10Turn off heat.

Step 11Arrange chicken in layers alternating with corn cream in a buttered baking dish.

Step 12Sprinkle more cheese on top.

Step 13Bake in 350 oven until bubbling.

Step 14Broil until golden brown.
