chicken, cut into 8 parts

6 c
chicken broth
1 c
1/2 c
heavy cream
2 Tbsp
1/2 c
grated parmesan cheese
diced carrot
onion, diced
garlic clove
parsley sprigs
salt to taste

How to Make Chicken In Corn Cream


  • 1Cook chicken in broth with carrot, onion, garlic and peppercorns.
  • 2Add parsley in the last minute.
  • 3Remove chicken and strain broth.
  • 4Take chicken out of bones and cut into bite size pieces.
  • 5Melt butter until it foams.
  • 6Stir in flour to make a blond roux.
  • 7Stir in 1 cup broth along with milk, stirring vigorously until slightly thickened.
  • 8Add drained corn, butter, nutmeg, salt, pepper, cheese and cream.
  • 9Bring to a boil, stirring.
  • 10Turn off heat.
  • 11Arrange chicken in layers alternating with corn cream in a buttered baking dish.
  • 12Sprinkle more cheese on top.
  • 13Bake in 350 oven until bubbling.
  • 14Broil until golden brown.
