Ingredients

  • 2-3 pounds chicken, broiler-fryer
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups stuffing
  • 1/4 cup butter
  • 1/2 cup boullion
  • 4 - potatoes, peeled and quartered
  • 1/2 pound peas
  • 6 - carrots, sliced

How To Make chicken in casserole

  • Step 1
    Heat oven to 375.
  • Step 2
    Wash and dry chicken.
  • Step 3
    Sprinkle cavity with 1/2 teaspoon salt and pepper.
  • Step 4
    Stuff with stuffing.
  • Step 5
    Tie legs together.
  • Step 6
    Brown on all sides in butter in deep baking pan.
  • Step 7
    Add bouillon and potatoes.
  • Step 8
    Bake, covered 30 minutes.
  • Step 9
    Add peas and carrots and remaining 1/2 teaspoon salt.
  • Step 10
    Cover and bake 30 minutes longer.
