This is a great way to cook a whole chicken in a lot of less time it takes in the oven. I love this method, especially on a week night. I have juicy tasty chicken every time.

Ingredients
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/4 teaspoon chili powder
- 1 teaspoon poultry seasoning
- 4-5 pounds chicken, whole
- 6-8 pats of butter
- 1 medium onion
- 2-3 tablespoons coconut oil
- 1 cup water or chicken stock
How To Make chicken in a "instant" pot

Step 1Mix all 10 spices together and set aside

Step 2Chop onion into quarters and stuff it inside the cavity of the chicken. Place the pats of butter under the skin of the breast parts. Tie up the legs. And rub the spice mixture all over it.

Step 3Put coconut oil enough to cover bottom in the instant pot and set it to sauté mode. When hot, place whole chicken breast side down. Let it sit there for 4 minutes (I time it) then turn the chicken over and cook it for another 4 minutes.

Step 4Remove chicken and place the trivet inside add 1 cup of water and put chicken back in the pot, breast side up.

Step 5Set instant pot on manual, maximum pressure for 25-28 minutes. Let it release on its own.
