I wish I could remember where I got this recipe from but I made it a LOT at one time. I haven't done it in quite some time but I remember it being SO good! My kids would even eat it up like crazy!

Ingredients

  • - 2 1/2 - 3lb chicken pieces
  • 1/4 cup butter, room temperature
  • 2 tablespoons cooking oil
  • 1 cup finely chopped onion
  • 1/2 - green pepper, chopped
  • 2 1/4 teaspoons garlic powder
  • 1/2 teaspoon basil, dried
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup diced stewed tomatoes
  • 1/2 cup tomato juice, chicken broth or water(your choice)
  • - sliced mushrooms (optional)

How To Make chicken hunter style

  • Step 1
    cut up chicken, unless you bought it already cut up. You can use boneless, skinless chicken or whole chicken..however you want.
  • Step 2
    Brown the chicken in the butter and oil until evenly browned on all sides.
  • Step 3
    Add the onion, gr. pepper, garlic, basil, salt & pepper. Stir; Cook til onion is soft but not brown(about 5 minutes).
  • Step 4
    Add tomatoes & stir well. Bring to a boil, cover & cook over low heat for 20 minutes, stirring occasionally.
  • Step 5
    Add liquid and simmer 10 minutes.
  • Step 6
    Remove chicken to serving dish & spoon sauce over chicken. Serve with rice.
