I wish I could remember where I got this recipe from but I made it a LOT at one time. I haven't done it in quite some time but I remember it being SO good! My kids would even eat it up like crazy!

Ingredients For chicken hunter style

2 1/2 - 3lb chicken pieces
-
1/4 cbutter, room temperature
-
2 Tbspcooking oil
-
1 cfinely chopped onion
-
1/2green pepper, chopped
-
2 1/4 tspgarlic powder
-
1/2 tspbasil, dried
-
1 tspsalt
-
1/2 tsppepper
-
1 cdiced stewed tomatoes
-
1/2 ctomato juice, chicken broth or water(your choice)
-
sliced mushrooms (optional)
How To Make chicken hunter style

1cut up chicken, unless you bought it already cut up. You can use boneless, skinless chicken or whole chicken..however you want.

2Brown the chicken in the butter and oil until evenly browned on all sides.

3Add the onion, gr. pepper, garlic, basil, salt & pepper. Stir; Cook til onion is soft but not brown(about 5 minutes).

4Add tomatoes & stir well. Bring to a boil, cover & cook over low heat for 20 minutes, stirring occasionally.

5Add liquid and simmer 10 minutes.

6Remove chicken to serving dish & spoon sauce over chicken. Serve with rice.
