I wish I could remember where I got this recipe from but I made it a LOT at one time. I haven't done it in quite some time but I remember it being SO good! My kids would even eat it up like crazy!

2 1/2 - 3lb chicken pieces
1/4 c
butter, room temperature
2 Tbsp
cooking oil
1 c
finely chopped onion
green pepper, chopped
2 1/4 tsp
garlic powder
1/2 tsp
basil, dried
1 tsp
1/2 tsp
1 c
diced stewed tomatoes
1/2 c
tomato juice, chicken broth or water(your choice)
sliced mushrooms (optional)

How to Make Chicken Hunter Style


  • 1cut up chicken, unless you bought it already cut up. You can use boneless, skinless chicken or whole chicken..however you want.
  • 2Brown the chicken in the butter and oil until evenly browned on all sides.
  • 3Add the onion, gr. pepper, garlic, basil, salt & pepper. Stir; Cook til onion is soft but not brown(about 5 minutes).
  • 4Add tomatoes & stir well. Bring to a boil, cover & cook over low heat for 20 minutes, stirring occasionally.
  • 5Add liquid and simmer 10 minutes.
  • 6Remove chicken to serving dish & spoon sauce over chicken. Serve with rice.
