Ingredients
- 1/2 cup butter
- 1/3 cup flour
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 8 ounces mushrooms, sliced
- salt and pepper
- 4 cloves garlic, minced
- 2 cups chicken stock
- 2 cups chicken hearts, trimmed and cut in half
- rice, noodles, or mashed potatoes for serving
- fresh parsley, for garnish
How To Make chicken hearts with mushrooms and onions

Step 1Melt the butter in a saucepan. Whisk in the flour. Keep whisking until the roux turns a medium brown to dark brown color, about 10 minutes. Remove from heat and set aside

Step 2Add the oil to another saute pan. Add the onion and mushrooms and cook about 6 minutes. Season with salt and pepper. Add the garlic and cook 1 minute. Add the chicken stock and bring to a boil. Add the roux and cook about 5 minutes. Add the chicken hearts and cook 5 more minutes. Taste and adjust seasoning.

Step 3Serve over rice, noodles, or mashed potatoes and garnish with parsley.
