Chicken Hashbrown Surprise

This recipe was born of a craving I had for something savory and filling. An easy comfort food that can be baked in an hour in the oven or slow cooked in the crock pot. Yum!! I am the first to admit this can be made in a million different variations. A true "dump" recipe for cleaning out the pantry or freezer. :)

chicken breasts, cubed
1 can(s)
cream of chicken or mushroom soup
4 c
(20 oz) hashbrowns , shredded or cubed
2 clove
fresh garlic
1 can(s)
corn, drained
1 tsp
1 tsp
1 can(s)
mushroom pieces (fresh best)
1/4 c
diced onion
2 Tbsp
butter or margarine
1/2 c
shredded cheddar


1Cube chicken and place evenly on bottom of crock pot. If baking in oven: cook chicken on stove top and spread in 9x11.
2In small saute pan, brown mushrooms & onion in butter till softened.
3In mixing bowl, mix remaining ingredients, saving a portion of cheese to top once spread in pan.

*optional when baking: crushed corn flake topping w/ cheddar.
4Bake for 1 hour at 350.


Slow cook for 4 hours on high.
