chicken hashbrown surprise

This recipe was born of a craving I had for something savory and filling. An easy comfort food that can be baked in an hour in the oven or slow cooked in the crock pot. Yum!! I am the first to admit this can be made in a million different variations. A true "dump" recipe for cleaning out the pantry or freezer. :)

Ingredients

  • 4 - chicken breasts, cubed
  • 1 can cream of chicken or mushroom soup
  • 4 cups (20 oz) hashbrowns , shredded or cubed
  • 2 cloves fresh garlic
  • 1 can corn, drained
  • 1 teaspoon tarragon
  • 1 teaspoon rosemary
  • 1 can mushroom pieces (fresh best)
  • 1/4 cup diced onion
  • 2 tablespoons butter or margarine
  • 1/2 cup shredded cheddar

How To Make chicken hashbrown surprise

  • Step 1
    Cube chicken and place evenly on bottom of crock pot. If baking in oven: cook chicken on stove top and spread in 9x11.
  • Step 2
    In small saute pan, brown mushrooms & onion in butter till softened.
  • Step 3
    In mixing bowl, mix remaining ingredients, saving a portion of cheese to top once spread in pan. *optional when baking: crushed corn flake topping w/ cheddar.
  • Step 4
    Bake for 1 hour at 350. or Slow cook for 4 hours on high.
