chicken hashbrown surprise
This recipe was born of a craving I had for something savory and filling. An easy comfort food that can be baked in an hour in the oven or slow cooked in the crock pot. Yum!! I am the first to admit this can be made in a million different variations. A true "dump" recipe for cleaning out the pantry or freezer. :)

Ingredients
- 4 - chicken breasts, cubed
- 1 can cream of chicken or mushroom soup
- 4 cups (20 oz) hashbrowns , shredded or cubed
- 2 cloves fresh garlic
- 1 can corn, drained
- 1 teaspoon tarragon
- 1 teaspoon rosemary
- 1 can mushroom pieces (fresh best)
- 1/4 cup diced onion
- 2 tablespoons butter or margarine
- 1/2 cup shredded cheddar
How To Make chicken hashbrown surprise

Step 1Cube chicken and place evenly on bottom of crock pot. If baking in oven: cook chicken on stove top and spread in 9x11.

Step 2In small saute pan, brown mushrooms & onion in butter till softened.

Step 3In mixing bowl, mix remaining ingredients, saving a portion of cheese to top once spread in pan. *optional when baking: crushed corn flake topping w/ cheddar.

Step 4Bake for 1 hour at 350. or Slow cook for 4 hours on high.
