Ingredients

  • 1/2 cup dried wood ear mushrooms
  • 1 pound boneless skinless chicken thighs cut into slices
  • 1 tablespoon grated ginger
  • 4 cloves garlic minced
  • 3 green onions chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons brown sugar
  • 1/4 cup chicken stock
  • fresh cilantro and microgreens for garnish

How To Make chicken ginger stir fry

  • Step 1
    Place the mushrooms in hot water and let soak for 20 minutes to rehydrate them.
  • Step 2
    In a large skillet or Wok add the oil. Add the ginger and garlic and stir fry 30 seconds. Add the chicken, fish sauce, oyster sauce, and brown sugar and stir fry 1 minute.
  • Step 3
    Add the green onions, mushrooms and chicken stock and cook until chicken is cooked through and most moisture is absorbed.
  • Step 4
    Serve garnished with cilantro and microgreens
