Ingredients
- 1/2 cup dried wood ear mushrooms
- 1 pound boneless skinless chicken thighs cut into slices
- 1 tablespoon grated ginger
- 4 cloves garlic minced
- 3 green onions chopped
- 2 tablespoons vegetable oil
- 2 tablespoons fish sauce
- 1 tablespoon oyster sauce
- 2 tablespoons brown sugar
- 1/4 cup chicken stock
- fresh cilantro and microgreens for garnish
How To Make chicken ginger stir fry

Step 1Place the mushrooms in hot water and let soak for 20 minutes to rehydrate them.

Step 2In a large skillet or Wok add the oil. Add the ginger and garlic and stir fry 30 seconds. Add the chicken, fish sauce, oyster sauce, and brown sugar and stir fry 1 minute.

Step 3Add the green onions, mushrooms and chicken stock and cook until chicken is cooked through and most moisture is absorbed.

Step 4Serve garnished with cilantro and microgreens
