chicken fried rice
This is a recipe I adapted from one given to me by my cousin. It is easy to change up the ingredients to make it your own.

Ingredients
- 2-3 slices bacon
- 1/8 cup olive oil
- 1/8 cup sesame oil
- 3 heaping tablespoons sugar
- 2-3 stalks celery, chopped
- 1/2 large bell pepper, cut into bite-size pieces.
- 1/2 cup carrots, chopped
- 1/2 cup broccoli florets, chopped
- 3 cups cold rice
- 1/2 cup frozen green peas
- 4 ounce cans mushrooms, drained and chopped
- 1 - cooked scrambled egg
- 2 cups cooked chicken, cubed
- - soy sauce to taste
- 3 - green onions, chopped
- - salt and pepper to taste
How To Make chicken fried rice

Step 1Fry bacon, drain and break into small pieces. Hint: I like to freeze the bacon for a few minutes then cut it into small pieces before cooking. Also if you want the flavor you can use the bacon grease in place of the olive oil.

Step 2To wok or LARGE pan add oils and sugar. After heating on medium, add celery, carrots and bell pepper. Cook one to two minutes. Add brocolli. Cook one minute. Add rice, bacon, mushrooms, scrambled egg, chicken and green peas. Heat thoroughly. Sprinkle on soy sauce. Mix well. Add green onions. Salt and pepper to taste.
