Taste just like chicken fried rice but low carb and lots of veggies. Yum

Ingredients

  • 1/2 pound chicken boneless skinless cut into small pieces
  • 2 tablespoons oil
  • 1 small onion diced
  • 4 ounces mushrooms chopped
  • 1/2 cup each carrot shredded and peas
  • 4 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 cup bean sprouts
  • 1 - head cauliflower grated or riced in food processor
  • 2 large eggs beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce
  • 2 tablespoons sambal oelek chili sauce
  • 1 teaspoon sesame oil
  • 2 - green onions chopped

How To Make chicken fried cauliflower rice

  • Step 1
    Add oil to large skillet. Add chicken and stir fry 3 minutes. Add the onion and mushrooms stir fry 2 minutes. Add the carrots, peas and cauliflower stir fry another 3 minutes. Add the ginger garlic and bean sprouts. Stir fry 1 minute. Make a well in the middle of pan and add the eggs and let sit for a minute then stir fry them into the mixture. Add the soy sauce, sweet soy sauce chili sauce and sesame oil. Sprinkle with green onions.
