Ingredients For chicken fried cauliflower rice

  • 1/2 lb
    chicken boneless skinless cut into small pieces
  • 2 Tbsp
    oil
  • 1 sm
    onion diced
  • 4 oz
    mushrooms chopped
  • 1/2 c
    each carrot shredded and peas
  • 4 clove
    garlic minced
  • 1 Tbsp
    ginger minced
  • 1 c
    bean sprouts
  • 1
    head cauliflower grated or riced in food processor
  • 2 lg
    eggs beaten
  • 2 Tbsp
    soy sauce
  • 1 Tbsp
    sweet soy sauce
  • 2 Tbsp
    sambal oelek chili sauce
  • 1 tsp
    sesame oil
  • 2
    green onions chopped

How To Make chicken fried cauliflower rice

  • 1
    Add oil to large skillet. Add chicken and stir fry 3 minutes. Add the onion and mushrooms stir fry 2 minutes. Add the carrots, peas and cauliflower stir fry another 3 minutes. Add the ginger garlic and bean sprouts. Stir fry 1 minute. Make a well in the middle of pan and add the eggs and let sit for a minute then stir fry them into the mixture. Add the soy sauce, sweet soy sauce chili sauce and sesame oil. Sprinkle with green onions.
