chicken fingers with a side

This was our Saturday meal. I used only two large chicken breasts and it was more than enough for two adults. The veggies were already in the fridge. Enjoy!

Ingredients

  • 6 - boneless chicken skinless chicken breast
  • 1 - egg, slightly beaten
  • 1 cup buttermilk
  • 1 1/2 teaspoons garlic powder
  • 1 cup all purpose flour
  • 1 cup seasoned bread crumbs or panko
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • - oil for frying
  • - basket mushroom, med onion, green and yellow peppers, sir fry

How To Make chicken fingers with a side

  • Step 1
    cut the chicken into 1/2 inch strips; in a large resealable plastic bag, combine the egg, buttermilk and garlic powder; add chicken. Seal bag and turn to coat; refrigerate for 2 to 4 hours.
  • Step 2
    drain and discard marinade. In another large resealable plastic bag; combine the flour, bread crumbs, salt and baking powder; add chicken. Seal bag and toss to coat.
  • Step 3
    In an electric skillet, heat oil to 375, or any nice frying skillet or fry daddy. Fry the chicken in batches for 4-5 minutes or until golden brown on both sides. Drain on paper towels.
  • Anytime meal or snack!
    Step 4
    In separate skillet using a little butter, stir fry the mushroom, onion and peppers with a little seasoning. Serve with chicken
