chicken fingers with a side
This was our Saturday meal. I used only two large chicken breasts and it was more than enough for two adults. The veggies were already in the fridge. Enjoy!

Ingredients
- 6 - boneless chicken skinless chicken breast
- 1 - egg, slightly beaten
- 1 cup buttermilk
- 1 1/2 teaspoons garlic powder
- 1 cup all purpose flour
- 1 cup seasoned bread crumbs or panko
- 1 teaspoon salt
- 1 teaspoon baking powder
- - oil for frying
- - basket mushroom, med onion, green and yellow peppers, sir fry
How To Make chicken fingers with a side

Step 1cut the chicken into 1/2 inch strips; in a large resealable plastic bag, combine the egg, buttermilk and garlic powder; add chicken. Seal bag and turn to coat; refrigerate for 2 to 4 hours.

Step 2drain and discard marinade. In another large resealable plastic bag; combine the flour, bread crumbs, salt and baking powder; add chicken. Seal bag and toss to coat.

Step 3In an electric skillet, heat oil to 375, or any nice frying skillet or fry daddy. Fry the chicken in batches for 4-5 minutes or until golden brown on both sides. Drain on paper towels.

Step 4In separate skillet using a little butter, stir fry the mushroom, onion and peppers with a little seasoning. Serve with chicken
