Ingredients

  • 3
    chicken breasts, halved, boneless, skinless and diced
  • 1.5 tsp
    curry powder
  • 1.5 tsp
    paprika
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 2
    garlic cloves, minced
  • 1/4 tsp
    chicken bouillon granules
  • 1/2 c
    hot water
  • 3 Tbsp
    water
  • 1 tsp
    oil
  • 1/2 tsp
    hot sauce
  • 1.5 c
    green onion, sliced
  • 1 Tbsp
    flour
  • 1/2 tsp
    ground cumin
  • 8
    manicotti shells
  • 8 oz
    yogurt, plain
  • 1 c
    tomatoes, chopped

How to Make Chicken Filled Manicotti

Step-by-Step

  1. Combine chicken, curry powder, paprika, salt, pepper and minced garlic in a medium bowl and toss well. Cover and chill mixture 1 hour.
  2. Dissolve bouillon in hot water and set aside.
  3. Coat a large skillet with vegetable spray, add oil and place over medium heat until hot.
  4. Add chicken mixture and cook 3 minutes, stirring constantly. Add green onions and cook 2 minutes.
  5. Stir in flour and cook 1 minute. Gradually add bouillon mixture and cook 3 minutes or until thickened, stirring constantly.
  6. Stuff each shell with about 1/2 cup of chicken mixture.
  7. Arrange in a baking dish coated with spray. Cover and bake at 350 for 30 minutes.
  8. Combine yogurt, tomatoes, water, cumin and hot sauce in a bowl. Spoon over manicotti. Serve warm.
