Ingredients

3chicken breasts, halved, boneless, skinless and diced

1.5 tspcurry powder

1.5 tsppaprika

1/4 tspsalt

1/4 tsppepper

2garlic cloves, minced

1/4 tspchicken bouillon granules

1/2 chot water
-
3 Tbspwater
-
1 tspoil
-
1/2 tsphot sauce

1.5 cgreen onion, sliced

1 Tbspflour
-
1/2 tspground cumin
-
8manicotti shells
-
8 ozyogurt, plain
-
1 ctomatoes, chopped
How to Make Chicken Filled Manicotti
- Combine chicken, curry powder, paprika, salt, pepper and minced garlic in a medium bowl and toss well. Cover and chill mixture 1 hour.
- Dissolve bouillon in hot water and set aside.
- Coat a large skillet with vegetable spray, add oil and place over medium heat until hot.
- Add chicken mixture and cook 3 minutes, stirring constantly. Add green onions and cook 2 minutes.
- Stir in flour and cook 1 minute. Gradually add bouillon mixture and cook 3 minutes or until thickened, stirring constantly.
- Stuff each shell with about 1/2 cup of chicken mixture.
- Arrange in a baking dish coated with spray. Cover and bake at 350 for 30 minutes.
- Combine yogurt, tomatoes, water, cumin and hot sauce in a bowl. Spoon over manicotti. Serve warm.
