Ingredients
- 3 - chicken breasts, halved, boneless, skinless and diced
- 1.5 teaspoons curry powder
- 1.5 teaspoons paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 - garlic cloves, minced
- 1/4 teaspoon chicken bouillon granules
- 1/2 cup hot water
- 3 tablespoons water
- 1 teaspoon oil
- 1/2 teaspoon hot sauce
- 1.5 cups green onion, sliced
- 1 tablespoon flour
- 1/2 teaspoon ground cumin
- 8 - manicotti shells
- 8 ounces yogurt, plain
- 1 cup tomatoes, chopped
How To Make chicken filled manicotti

Step 1Combine chicken, curry powder, paprika, salt, pepper and minced garlic in a medium bowl and toss well. Cover and chill mixture 1 hour.

Step 2Dissolve bouillon in hot water and set aside.

Step 3Coat a large skillet with vegetable spray, add oil and place over medium heat until hot.

Step 4Add chicken mixture and cook 3 minutes, stirring constantly. Add green onions and cook 2 minutes.

Step 5Stir in flour and cook 1 minute. Gradually add bouillon mixture and cook 3 minutes or until thickened, stirring constantly.

Step 6Stuff each shell with about 1/2 cup of chicken mixture.

Step 7Arrange in a baking dish coated with spray. Cover and bake at 350 for 30 minutes.

Step 8Combine yogurt, tomatoes, water, cumin and hot sauce in a bowl. Spoon over manicotti. Serve warm.
