4chicken breasts, boneless and skinless. cooked and chopped
1 1/2 stickbutter/ i use less. just enough to saute them
11 ozcream cheese, room temperature
1 can(s)chopped green chili pepper's
1 pkgflour tortillas
1 lbmonterey jack cheese
1c cwhipping cream/just enough to cover tortillas
·black olives,tomatoes & green onions to garnish
How to Make Chicken Enchiladas
- Saute onions in butter till they are clesr
- Add cream cheese & peppers mix and add chicken.
- Place 2 to 3 tbsp of chicken mixture in tortillas, roll and place in 9x13 bakiing dish. Pour whipping cream over the rolled tortilas cover with Monterey Jack cheese. Bake @ 350 for 20 to 30 minutes
- Garnish with chopped black olives tomoatoes and green onion.. I also have salsa and sour cream if any one wants to add that to their dish.. Great the next day ..
