We like this its not as spicy as some we have had. And its easy.

Ingredients

  • 1 small onion chopped
  • 1 clove garlic,minced
  • 4 small cooked chicken breast shredded
  • 11/2 cups think ,chunky salsa
  • 1 - 4oz 1/2 of 8oz of cream cheese cubed
  • 1 teaspoon chopped cilantro
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup monterey jack cheese shredded
  • 8 - flour tortillas
  • 2 tablespoons olive oil, extra virgin

How To Make my chicken enchiladas

  • Step 1
    oven at 350. Heat in large skillet with 2 tbsp of olive oil.On med heat.Add onion,garlic,cook and stir about 2min. Add chicken,1/4 of salsa, cream cheese cubed ,cilantro mix well cook until heated,stirring occaseonally.Add 1/2 of shredded cheeses,mix well.,
  • Step 2
    Spoon about 1/3 cup of chicken mixture into each tortilla, roll up .Spray baking pan with cooking oil. Place seam side down,in 13=9 baking dish.top with remaining salsa and cheeses bake 30 min.4 serving
