These are a bit different than a regular enchilada. If you like Greek yogurt than you will like the sauce in this recipe.

Ingredients

  • FILLING
  • - 3 boneless, skinless chicken breasts; cooked & shredded
  • - 1/2 cup onion; chopped
  • - 1/2 cup salsa
  • - 1 cup mexican blend shredded cheese
  • - 3/4 cup sour cream
  • - 1/2 tbsp cumin
  • - soft tortillas
  • - salt and pepper
  • SAUCE
  • - 3/4 cup of salsa
  • - 1/2 cup greek yogurt
  • - 1/2 cup of sour cream
  • - 2 tbsp green onion

How To Make chicken enchiladas

  • Step 1
    Preheat oven to 350 degrees. Mix chicken, onion, salsa, cheese, sour cream, and cumin together. Salt and pepper. Spoon chicken mixture on tortillas. Wrap tortillas and place them in a large baking pan. Combine salsa, yogurt, sour cream, and green onions in another bowl. Pour sauce over tortillas. Sprinkle with cheese and bake for 30 minutes.
