Ingredients

  • 2 large chicken breast
  • 2 cans cream of chicken soup
  • 1 (16) ounce sour cream
  • 1 can chopped green chilies
  • 3 cups shredded co-jack cheese
  • 3/4 cup green onion, chopped
  • 1 package 10" tortillas

How To Make chicken enchiladas

  • Step 1
    Cook chicken, cool and shred
  • Step 2
    In large bowl, combine soup, sour cream, green chilies, onion, and half of the cheese
  • Step 3
    Spray 9x13 pan. Spread a thin layer of filling on the bottom of pan
  • Step 4
    Spoon filling (1/4 to 1/3 cup) into tortillas and roll. Cut tortilla to fit in pan
  • Step 5
    Put remaining filling on top, then top with the remaining cheese
  • Step 6
    Bake at 350 for 30 minutes
