Serve with chips and salsa. These are also great to freeze and heat up quickly.

Ingredients

  • 6-7 - boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 8 ounces shredded monterey jack cheese
  • 1 package flour tortillas
  • 1 can mild enchilada sauce

How To Make chicken enchiladas

  • Step 1
    Cook chicken and cool. combine soup and sour cream. Add half of cheese. Add chicken and mix well. Spray 9x13 pan with cooking spray. I use large tortillas so I use several spoonfuls of mixture in middle of tortillas and roll up. Place in baking dish, seam side down. Top with the remainder of cheese. Serve with mild enchilada sauce.

    Bake at 350 degrees for 30 minutes or until bubbly.
