You can use my fresh salsa verde recipe or buy it in a jar. This is so tasty with the flavorful rotisserie chicken and all the cheeses. It was a big hit.

Ingredients

  • 2 small rotisserie chicken skin removed meat shredded or chopped about 6 cups
  • 1 small can chopped green chilies
  • 1 jar tostitos salsa con queso
  • 1/2 cup cotija cheese
  • 1/2 cup queso fresco cheese crumbled
  • 1 cup fresh cilantro
  • 10 burrito size flour tortillas.
  • 4 cups fresh salsa verde
  • 2 cups mexican mixed shredded cheese

How To Make chicken enchilada with my fresh salsa verde

  • Step 1
    Preheat oven 400 degrees Mix the chicken, green chilies, Queso, Cojita, Fresco cheeses and cilantro together.
  • Step 2
    Take a large baking pan and spray it with cooking spray. Fill each tortilla with chicken mixture and roll up and put in the baking pan.
  • Step 3
    Pour the salsa verde over the top and bake about 30 minutes. Remove from oven. Sprinkle the Mexican mix cheese on top and place back in oven until the cheese has melted. Enjoy
