Again this is one from my father and it is good enough to entertain with as well as being a weeknight speciality. Enjoy!

Ingredients

  • 3 pounds chicken (cooked & boned)
  • 1 can condensed cream of chicken soup
  • 1 can condensed cream of mushroom soup
  • 1 can 4 oz. chilies, chopped
  • 1 teaspoon chili powder
  • 4 teaspoons minced oninons
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon tabasco
  • 1 can chicken broth
  • 2 packages cheddar cheese
  • 1 package corn chips

How To Make chicken enchilada pie

  • Step 1
    Combine soups, chilies, spices, tabasco, and chicken till well blended. Spray a deep dish casserole pan with non-stick cooking spray. Cover bottom of the dish with a layer of corn chips. Layer chicken and soup mixture on top of the chips. Top layer with a layer of the cheddar cheese. Repeat layering the pie ending with the cheese. Bake at 350 degrees for 25-30 minutes.

    *Use taco chips, Doritos, or even nacho chips for a differant flavor. Enjoy!
