chicken enchilada casserole

This is a quick and easy casserole and its a crowd pleaser. I like making a big batch and serving it at our pot-luck gatherings ...yum I sometimes change the meat and make hamburger enchilada's instead.

Ingredients

  • 3-4 cups shredded cooked chicken
  • 1 package taco seasoning mix
  • 1/2 cup water
  • 9 - flour tortillas ; fajita size
  • 2 cups salsa
  • 1 can refried beans ; warmed
  • 8 ounces sour cream
  • 3-4 cups cheddar cheese, shredded
  • 1 can black olives slices

How To Make chicken enchilada casserole

  • Step 1
    In a skillet mix the shredded chicken with the taco seasoning pkg. , water and your favorite salsa ; simmer on medium high heat until warmed through.
  • Step 2
    Spray a 13x9 baking dish with cooking spray ; Cover the bottom of the dish with the 3 tortillas ; overlapping each one.
  • Step 3
    Pour 1/2 of the chicken mixture over top of tortillas ; spread evenly ; Cover with 3 more tortillas , Spread the warm beans on top and then the sour cream , then the sliced olives ; Top with the 1/2 shredded cheese ; top with the last 3 tortillas ; Top with the remaining mixture , then the remaining cheese.
  • Step 4
    Bake @ 350° for 30 minutes or until cheese is melted and heated through.
