chicken enchilada casserole
This is a quick and easy casserole and its a crowd pleaser. I like making a big batch and serving it at our pot-luck gatherings ...yum I sometimes change the meat and make hamburger enchilada's instead.

Ingredients
- 3-4 cups shredded cooked chicken
- 1 package taco seasoning mix
- 1/2 cup water
- 9 - flour tortillas ; fajita size
- 2 cups salsa
- 1 can refried beans ; warmed
- 8 ounces sour cream
- 3-4 cups cheddar cheese, shredded
- 1 can black olives slices
How To Make chicken enchilada casserole

Step 1In a skillet mix the shredded chicken with the taco seasoning pkg. , water and your favorite salsa ; simmer on medium high heat until warmed through.

Step 2Spray a 13x9 baking dish with cooking spray ; Cover the bottom of the dish with the 3 tortillas ; overlapping each one.

Step 3Pour 1/2 of the chicken mixture over top of tortillas ; spread evenly ; Cover with 3 more tortillas , Spread the warm beans on top and then the sour cream , then the sliced olives ; Top with the 1/2 shredded cheese ; top with the last 3 tortillas ; Top with the remaining mixture , then the remaining cheese.

Step 4Bake @ 350° for 30 minutes or until cheese is melted and heated through.
