Chicken Enchilada Casserole
I sometimes change the meat and make hamburger enchilada's instead.
3-4 cshredded cooked chicken
1 pkgtaco seasoning mix
9flour tortillas ; fajita size
1 can(s)refried beans ; warmed
8 ozsour cream
3-4 ccheddar cheese, shredded
1 can(s)black olives slices
How to Make Chicken Enchilada Casserole
- In a skillet mix the shredded chicken with the taco seasoning pkg. , water and your favorite salsa ; simmer on medium high heat until warmed through.
- Spray a 13x9 baking dish with cooking spray ; Cover the bottom of the dish with the 3 tortillas ; overlapping each one.
- Pour 1/2 of the chicken mixture over top of tortillas ; spread evenly ; Cover with 3 more tortillas , Spread the warm beans on top and then the sour cream , then the sliced olives ; Top with the 1/2 shredded cheese ; top with the last 3 tortillas ; Top with the remaining mixture , then the remaining cheese.
- Bake @ 350° for 30 minutes or until cheese is melted and heated through.
