This is a quick and easy casserole and its a crowd pleaser. I like making a big batch and serving it at our pot-luck gatherings ...yum

I sometimes change the meat and make hamburger enchilada's instead.

Ingredients

3-4 c
shredded cooked chicken
1 pkg
taco seasoning mix
1/2 c
water
9
flour tortillas ; fajita size
2 c
salsa
1 can(s)
refried beans ; warmed
8 oz
sour cream
3-4 c
cheddar cheese, shredded
1 can(s)
black olives slices

How to Make Chicken Enchilada Casserole

Step-by-Step

  • 1In a skillet mix the shredded chicken with the taco seasoning pkg. , water and your favorite salsa ; simmer on medium high heat until warmed through.
  • 2Spray a 13x9 baking dish with cooking spray ; Cover the bottom of the dish with the 3 tortillas ; overlapping each one.
  • 3Pour 1/2 of the chicken mixture over top of tortillas ; spread evenly ; Cover with 3 more tortillas , Spread the warm beans on top and then the sour cream , then the sliced olives ; Top with the 1/2 shredded cheese ; top with the last 3 tortillas ; Top with the remaining mixture , then the remaining cheese.
  • 4Bake @ 350° for 30 minutes or until cheese is melted and heated through.
