Ingredients
- 4 chicken drumsticks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 shallots, chopped
- 1 pint cherry tomatoes, halved
- 1 cup dry white wine
- 1 tablespoon dried oregano
- 3 cups spinach leaves
- salt and pepper
How To Make chicken drumsticks with cherry tomatoes & spinach

Step 1Heat a Dutch oven over med. high heat. Add the oil and let it smoke. Add the chicken drumsticks and brown on all sides. Remove the chicken and set aside.

Step 2Add the garlic and shallots to the Dutch oven and cook 2 minutes.

Step 3Add the chicken back to the pan and cover. Cook turning often for 30 minutes.

Step 4Add the cherry tomatoes, wine, and oregano. Cook 5 minutes.

Step 5Add the spinach and cook another 5 minutes. Taste and add salt and pepper.
