Ingredients

  • 6 whole chicken breasts, boned, skinned, split
  • salt and freshly ground pepper to taste
  • 1/3 cup yogurt
  • 1/4 cup Dijon mustard
  • 1/2 cup fine bread crumbs
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How To Make chicken dijon

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Lightly grease 1 or 2 large baking sheets.
  • Step 3
    Sprinkle chicken lightly with salt and pepper.
  • Step 4
    Stir together yogurt and mustard in a small bowl.
  • Step 5
    Spread mixture on bottom sides of chicken.
  • Step 6
    Place on baking sheets, coated side down, leaving space between pieces.
  • Step 7
    Spread mixture over top.
  • Step 8
    Combine bread crumbs, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Step 9
    Sprinkle over chicken.
  • Step 10
    Bake for 30 to 35 minutes until golden-brown and no longer pink in the center.
