This is a crockpot chicken recipe I came up with, it is really moist and tender and make a great sauce we ate over rice. This is a recipe I will cook alot.

Ingredients
- 3 - chicken leg quartes or what ever you perfer of the chicken
- 1 large can of whole tomatoes, chopped
- 2 - jalapenos, sliced
- 1 tablespoon herbes de provence
- - salt and pepper to taste
- 2 cloves garlic, minced or grated
- 1/2 - onion, chopped (but not small pieces)
- 1/3 cup fresh basil or 2 t. dried
- 1 - bay leaf
How To Make chicken de provence

Step 1In large bowl combine all ingredients, except chicken and bay leaf. Place chicken in crockpot, pour mixture over chicken, add bay leaf. Cook on low about 5-6 hours until chicken is tender. I topped the chicken with slice black olives when plated.
