Chicken de Provence

This is a crockpot chicken recipe I came up with, it is really moist and tender and make a great sauce we ate over rice. This is a recipe I will cook alot.

Slow Cooker Crock Pot

  • 3
    chicken leg quartes or what ever you perfer of the chicken
  • 1 large
    can of whole tomatoes, chopped
  • 2
    jalapenos, sliced
  • 1 Tbsp
    herbes de provence
  • ·
    salt and pepper to taste
  • 2 clove
    garlic, minced or grated
  • 1/2
    onion, chopped (but not small pieces)
  • 1/3 c
    fresh basil or 2 t. dried
  • 1
    bay leaf

How to Make Chicken de Provence


  1. In large bowl combine all ingredients, except chicken and bay leaf. Place chicken in crockpot, pour mixture over chicken, add bay leaf. Cook on low about 5-6 hours until chicken is tender. I topped the chicken with slice black olives when plated.
