This is a crockpot chicken recipe I came up with, it is really moist and tender and make a great sauce we ate over rice. This is a recipe I will cook alot.

Ingredients

  • 3 - chicken leg quartes or what ever you perfer of the chicken
  • 1 large can of whole tomatoes, chopped
  • 2 - jalapenos, sliced
  • 1 tablespoon herbes de provence
  • - salt and pepper to taste
  • 2 cloves garlic, minced or grated
  • 1/2 - onion, chopped (but not small pieces)
  • 1/3 cup fresh basil or 2 t. dried
  • 1 - bay leaf

How To Make chicken de provence

  • Step 1
    In large bowl combine all ingredients, except chicken and bay leaf. Place chicken in crockpot, pour mixture over chicken, add bay leaf. Cook on low about 5-6 hours until chicken is tender. I topped the chicken with slice black olives when plated.
