this is one chicken I used to make and decided to make it again as I like curry but in small amounts and this suits my palate hope you like this..

Ingredients
- 2 tablespoons canola or vegetable oil
- 1 large onion, sliced
- 2 tablespoons curry powder
- 8 - chicken, boneless, skinless thighs
- 1 can 398-ml coconut milk
- 2 large carrots cut into coins
- 2 medium potatoes peeled .cut into 1 inch chunks
- 1 cup frozen peas or soy beans called edamami
- 1/2 cup chopped fresh cilantro.
How To Make chicken curry

Step 1IN LARGE wide frying pan heat oil then add onion and curry powder. cook until onion starts to soften about 5 minutes,,sprinkle chicken with Mrs Dash original brand salt free seasoning add chicken to pan stir until coated.

Step 2ADD coconut milk to pan and bring to boil reduce heat and simmer covered stirring occasionally until vegies are tender about 15 minutes. remove lid and continue cooking until slightly thickened..add cilantro and peas and cook for 1 more minute serve over rice and salad on the side...
