Ingredients

  • 1 medium chopped purple onion
  • 3 cloves garlic crushed with 1/2 tsp salt
  • 1/3 medium green pepper diced
  • 1 tablespoon curry powder
  • 1 tablespoon pureed ginger
  • 1/2 cup chicken broth
  • 1 can cream of mushroom soup
  • 1 tablespoon cornstarch
  • 2 medium chicken breasts, boneless and skinless
  • 2 tablespoons raisins or chopped apple
  • 2 tablespoons chopped green onion for garnish
  • 1/4 cup oil

How To Make chicken curry

  • Step 1
    Heat oil in medium pot,add purple onion,garlic,ginger& curry powder,till onion is transparent remove all to a bowl put aside
  • Step 2
    Add more oil if needed,brown chicken well, add onion & spices back ,add soup,stock,raisins
  • Step 3
    After about 30 mins or so simmering add green pepper simmer till thicker adding cornstarch,if needed. Garnish with green onion serve over steamed rice
