I learned to make crepes when we lived in Belgium, mostly the dessert type. This is Grandma W's savory crepes recipe with chicken, and it is absolutely delicious!

Ingredients

  • 2/3 cup flour
  • 2 - eggs
  • 3 tablespoons melted butter, cooled
  • 1/8 teaspoon salt
  • 1 cup milk
  • 1/4 cup butter
  • 3/4 pound mushrooms, chopped
  • 1/2 cup green onion, chopped
  • 2 1/2 cups cooked chicken, diced
  • 1/2 cup sherry
  • 1/2 teaspoon salt
  • dash pepper
  • 1/4 cup flour
  • 2/3 cup sherry
  • 10 3/4 ounces chicken broth, condensed
  • 2 cups light cream
  • 1/2 teaspoon salt
  • dash pepper
  • - oil
  • 1/2 cup grated swiss cheese

How To Make chicken crepes, grandma w

  • Step 1
    BATTER: Combine 2/3 c flour, eggs, cooled butter, salt and 1/2 c milk and beat smooth. Add rest of milk, beat smooth. Cover and refrigerate overnight.
  • Step 2
    FILLING: Heat 1/4 c butter in skillet, add mushrooms and onion and saute 10 min. Add chicken, 1/2 c sherry, salt and pepper. High heat until liquid is gone.
  • Step 3
    SAUCE: Bring to boil over med heat all but oil and cheese. Stir, simmer 2 min. Add half the sauce to chicken and set aside.
  • Step 4
    Cook crepes in 7" skillet brushed lightly with oil. Pour in 2 T batter, rotate to cover bottom. Cook med-golden, flip and cook other side. Cool. repeat.
  • Step 5
    Oven to 425 degrees. Place 1/4 c filling on each crepe, roll and arrange seam down in shallow, buttered baking dish. Cover with sauce and sprinkle with swiss cheese. Bake 15 min or until bubbly.
