I learned to make crepes when we lived in Belgium, mostly the dessert type. This is Grandma W's savory crepes recipe with chicken, and it is absolutely delicious!

Ingredients
- 2/3 cup flour
- 2 - eggs
- 3 tablespoons melted butter, cooled
- 1/8 teaspoon salt
- 1 cup milk
- 1/4 cup butter
- 3/4 pound mushrooms, chopped
- 1/2 cup green onion, chopped
- 2 1/2 cups cooked chicken, diced
- 1/2 cup sherry
- 1/2 teaspoon salt
- dash pepper
- 1/4 cup flour
- 2/3 cup sherry
- 10 3/4 ounces chicken broth, condensed
- 2 cups light cream
- 1/2 teaspoon salt
- dash pepper

- 1/2 cup grated swiss cheese

Step 1BATTER: Combine 2/3 c flour, eggs, cooled butter, salt and 1/2 c milk and beat smooth. Add rest of milk, beat smooth. Cover and refrigerate overnight.

Step 2FILLING: Heat 1/4 c butter in skillet, add mushrooms and onion and saute 10 min. Add chicken, 1/2 c sherry, salt and pepper. High heat until liquid is gone.

Step 3SAUCE: Bring to boil over med heat all but oil and cheese. Stir, simmer 2 min. Add half the sauce to chicken and set aside.

Step 4Cook crepes in 7" skillet brushed lightly with oil. Pour in 2 T batter, rotate to cover bottom. Cook med-golden, flip and cook other side. Cool. repeat.

Step 5Oven to 425 degrees. Place 1/4 c filling on each crepe, roll and arrange seam down in shallow, buttered baking dish. Cover with sauce and sprinkle with swiss cheese. Bake 15 min or until bubbly.
