I learned to make crepes when we lived in Belgium, mostly the dessert type. This is Grandma W's savory crepes recipe with chicken, and it is absolutely delicious!

  • 2/3 c
    flour
  • 2
    eggs
  • 3 Tbsp
    melted butter, cooled
  • 1/8 tsp
    salt
  • 1 c
    milk
  • 1/4 c
    butter
  • 3/4 lb
    mushrooms, chopped
  • 1/2 c
    green onion, chopped
  • 2 1/2 c
    cooked chicken, diced
  • 1/2 c
    sherry
  • 1/2 tsp
    salt
  • dash(es)
    pepper
  • 1/4 c
    flour
  • 2/3 c
    sherry
  • 10 3/4 oz
    chicken broth, condensed
  • 2 c
    light cream
  • 1/2 tsp
    salt
  • dash(es)
    pepper
  • ·
    oil
  • 1/2 c
    grated swiss cheese

How to Make Chicken Crepes, Grandma W

Step-by-Step

  1. BATTER:
    Combine 2/3 c flour, eggs, cooled butter, salt and 1/2 c milk and beat smooth. Add rest of milk, beat smooth. Cover and refrigerate overnight.
  2. FILLING:
    Heat 1/4 c butter in skillet, add mushrooms and onion and saute 10 min. Add chicken, 1/2 c sherry, salt and pepper. High heat until liquid is gone.
  3. SAUCE:
    Bring to boil over med heat all but oil and cheese. Stir, simmer 2 min. Add half the sauce to chicken and set aside.
  4. Cook crepes in 7" skillet brushed lightly with oil. Pour in 2 T batter, rotate to cover bottom. Cook med-golden, flip and cook other side. Cool. repeat.
  5. Oven to 425 degrees. Place 1/4 c filling on each crepe, roll and arrange seam down in shallow, buttered baking dish. Cover with sauce and sprinkle with swiss cheese. Bake 15 min or until bubbly.
