I love chicken cordon bleu and this version is wonderful since pineapple goes well with both chicken and ham. Enjoy!

Ingredients

  • 1 can 8 oz. can pineapple slices
  • 2 boneless, skinless chicken breast halves
  • 2 tablespoons flour
  • 1/2 teaspoon onion salt
  • 1 tablespoon butter
  • 2 slices thin slices deli ham
  • CHEDDAR CHEESE SAUCE
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 cup milk
  • 1/4 cup finely grated sharp cheddar cheese
  • salt and pepper

How To Make chicken cordon bleu with pineapple slices

  • Step 1
    With a meat mallet, pound the chicken breasts to a 1/2 inch thickness. Combine flour with onion salt and dredge chicken to coat both sides.
  • Step 2
    Melt butter in a non-stick skillet and cook chicken (on each side) about 10 minutes total.
  • Step 3
    Top each chicken slice with a ham slice and continue cooking until ham is heated through. Remove chicken to a plate.
  • Step 4
    Heat pineapple slices until heated through. Top each piece of chicken with 2 pineapple slices and top with cheese sauce.
  • Step 5
    In a small saucepan, melt butter and flour and stir to allow mixture to bubble up - then remove pan from heat. Add milk and whisk over low heat until smooth and slightly thick. Add cheese and stir to melt. When melted completely - spoon over chicken breasts.
