chicken cordon bleu with pineapple slices
I love chicken cordon bleu and this version is wonderful since pineapple goes well with both chicken and ham. Enjoy!

Ingredients
- 1 can 8 oz. can pineapple slices
- 2 boneless, skinless chicken breast halves
- 2 tablespoons flour
- 1/2 teaspoon onion salt
- 1 tablespoon butter
- 2 slices thin slices deli ham
- CHEDDAR CHEESE SAUCE
- 1 tablespoon flour
- 1 tablespoon butter
- 1 cup milk
- 1/4 cup finely grated sharp cheddar cheese
- salt and pepper
How To Make chicken cordon bleu with pineapple slices

Step 1With a meat mallet, pound the chicken breasts to a 1/2 inch thickness. Combine flour with onion salt and dredge chicken to coat both sides.

Step 2Melt butter in a non-stick skillet and cook chicken (on each side) about 10 minutes total.

Step 3Top each chicken slice with a ham slice and continue cooking until ham is heated through. Remove chicken to a plate.

Step 4Heat pineapple slices until heated through. Top each piece of chicken with 2 pineapple slices and top with cheese sauce.

Step 5In a small saucepan, melt butter and flour and stir to allow mixture to bubble up - then remove pan from heat. Add milk and whisk over low heat until smooth and slightly thick. Add cheese and stir to melt. When melted completely - spoon over chicken breasts.
