Ingredients
- 8 milliliters rice noodles
- 1 pound chicken breast cut into small pieces
- 2 tablespoons olive oil
- 1 small onion chopped
- 1 large red bell pepper chopped
- 1 large carrot julienned
- 6 cloves garlic minced
- 3 tablespoons red curry paste
- 2 - 15 oz cans coconut milk
- 1 cup chicken broth
- 1 teaspoon ginger grated
- 1/4 cup brown sugar
- - salt to taste
- - cilantro and sliced red onion for garnish
How To Make chicken coconut curry noodle bowl

Step 1cook the rice noodles according to directions on package. drain and set aside.

Step 2Add olive oil to large pot. Add the chicken and cook until browned. Add the onion, red bell pepper, and carrots. Cook until softened. Add the ginger and garlic. Stir in the red curry paste.

Step 3Add the chicken stock and coconut milk. Simmer for 10 minutes. Taste and adjust for salt. Serve over rice and garnish with red onion and cilantro.
