I discovered this recipe a few years ago and it is a family favorite. You may use wine or buttermilk to suit your families taste. My husband prefers wine and the children like it with buttermilk. I like it BOTH ways!

Ingredients
- 6 tablespoons butter, melted
- 4 cups sourdough bread cubed
- 1/3 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- 2 medium sweet onion thinly sliced
- 1 ounce 8 oz mushrooms, fresh
- 1 cup wine or buttermilk
- 1 can cream of mushroom soup
- 1/2 cup drained and chopped jarred roasted red peppers
- 2 1/2 cups shredded cooked chicken
How To Make chicken cobbler

Step 1Toss 4 Tbsp melted butter with next 3 ingredients; set aside

Step 2Saute onions in the remaining 2 tbsp butter over medium high heat about 15 minutes or until golden brown, add mushrooms and saute another 5 minutes.

Step 3Stir in wine OR buttermilk and next 3 ingredients cook 5 minutes or until bubbly. Spoon mixture into a 9 inch or 11 x 7 inch lightly greased dish. Top with bread crumbs.

Step 4Bake at 400 degrees for 15 minutes or until golden brown.
