I discovered this recipe a few years ago and it is a family favorite. You may use wine or buttermilk to suit your families taste. My husband prefers wine and the children like it with buttermilk. I like it BOTH ways!

butter, melted
4 c
sourdough bread cubed
1/3 c
grated parmesan cheese
2 Tbsp
chopped parsley
2 medium
sweet onion thinly sliced
1 oz
8 oz mushrooms, fresh
1 c
wine or buttermilk
1 can(s)
cream of mushroom soup
1/2 c
drained and chopped jarred roasted red peppers
2 1/2 c
shredded cooked chicken

How to Make Chicken Cobbler


  • 1Toss 4 Tbsp melted butter with next 3 ingredients; set aside
  • 2Saute onions in the remaining 2 tbsp butter over medium high heat about 15 minutes or until golden brown, add mushrooms and saute another 5 minutes.
  • 3Stir in wine OR buttermilk and next 3 ingredients cook 5 minutes or until bubbly. Spoon mixture into a 9 inch or 11 x 7 inch lightly greased dish. Top with bread crumbs.
  • 4Bake at 400 degrees for 15 minutes or until golden brown.
