chicken chow mein
My recipe is a colorful and easy to prepare meal, especially if you cut the ingredients ahead of time, as it cooks quickly and can be on the table in about ten or fifteen minutes. This is great served over Chinese noodles which are crispy. A little extra soy sauce may be served at the table if desired.

Ingredients
- 1/2 - chicken breast, sliced
- 2 tablespoons cornstarch
- 2 tablespoons grapeseed oil
- 2 cups sliced celery
- 1 small bunch scallions, white and part of green stalk sliced
- 1 cup diced shitake or/white button mushrooms
- 1 teaspoon minced garlic
- 1 dash red pepper flakes
- 1 small chunk of peeled, fresh ginger, grated
- 1 can 14 ounces low salt chicken broth
- 1 cup broccoli florets or red bell pepper diced
- 1 large fresh carrot, sliced very thin
- 1 tablespoon light soy sauce
- 1 package chinese noodles
- WASH, SLICE, DICE VEGETABLES, AND GRATE FRESH GINGER
How To Make chicken chow mein

Step 1Over medium heat, in a large skillet or a wok, heat the oil. When it is shimmering add chicken and stir to coat with oil and brown on all sides.

Step 2Add vegetables, garlic, ginger and cook until tender or a little crunchy.

Step 3Mix broth and cornstarch together and stir into chicken and vegetables and stir until thickened.

Step 4Add seasonings and simmer gently just a couple of minutes.
