A meal that is quick and easy to put together. When I steam rice, I usually make a large quantity and freeze it so it's ready to go. You can also substitute beef tenderloin and beef broth for this recipe. It can also easily be doubled.

Ingredients

  • 4 tsp
    corn starch
  • 1 tsp
    sugar
  • 4 tsp
    soy sauce
  • 1
    garlic clove, minced
  • 1/2 lb
    chicken breast, cut into thin strips
  • 1 Tbsp
    canola oil
  • 2 c
    uncooked vegetables-carrots, green pepper, broccoli, celery, green onions
  • 1/3 c
    chicken broth
  • ·
    hot cooked rice
  • ·
    chow mein noodles

How to Make Chicken Chow Mein

Step-by-Step

  1. In a bowl, combine cornstarch, sugar, soy sauce and garlic. Add the chicken and toss to coat.
  2. In a large skillet or wok, stir fry the chicken in hot oil until no longer pink; remove and keep warm.
  3. Reduce heat to medium. Add the vegetables and broth; stir fry for 4 minutes.
  4. Return chicken to pan. Cook and stir for 2 minutes or until heated through. Serve over rice and top with chow mein noodles.
