chicken chow mein
A meal that is quick and easy to put together. When I steam rice, I usually make a large quantity and freeze it so it's ready to go. You can also substitute beef tenderloin and beef broth for this recipe. It can also easily be doubled.

Ingredients
- 4 teaspoons corn starch
- 1 teaspoon sugar
- 4 teaspoons soy sauce
- 1 - garlic clove, minced
- 1/2 pound chicken breast, cut into thin strips
- 1 tablespoon canola oil
- 2 cups uncooked vegetables-carrots, green pepper, broccoli, celery, green onions
- 1/3 cup chicken broth
- - hot cooked rice
- - chow mein noodles
How To Make chicken chow mein

Step 1In a bowl, combine cornstarch, sugar, soy sauce and garlic. Add the chicken and toss to coat.

Step 2In a large skillet or wok, stir fry the chicken in hot oil until no longer pink; remove and keep warm.

Step 3Reduce heat to medium. Add the vegetables and broth; stir fry for 4 minutes.

Step 4Return chicken to pan. Cook and stir for 2 minutes or until heated through. Serve over rice and top with chow mein noodles.
