A meal that is quick and easy to put together. When I steam rice, I usually make a large quantity and freeze it so it's ready to go. You can also substitute beef tenderloin and beef broth for this recipe. It can also easily be doubled.

Ingredients For chicken chow mein

4 tspcorn starch

1 tspsugar

4 tspsoy sauce

1garlic clove, minced

1/2 lbchicken breast, cut into thin strips

1 Tbspcanola oil

2 cuncooked vegetables-carrots, green pepper, broccoli, celery, green onions

1/3 cchicken broth

hot cooked rice
-
chow mein noodles
How To Make chicken chow mein

1In a bowl, combine cornstarch, sugar, soy sauce and garlic. Add the chicken and toss to coat.

2In a large skillet or wok, stir fry the chicken in hot oil until no longer pink; remove and keep warm.

3Reduce heat to medium. Add the vegetables and broth; stir fry for 4 minutes.

4Return chicken to pan. Cook and stir for 2 minutes or until heated through. Serve over rice and top with chow mein noodles.
