chicken chimichangas

Anything is good in a fried flour tortilla. I used leftover chicken for this, or cook some especially with this recipe in mind. These are even good the next day cold. This recipe was update on 9/20/2011

Ingredients

  • 4 cups cooked, shredded chicken
  • 8 ounces sour cream, lite
  • 8 ounces cheddar cheese, grated 2%
  • 1/2 cup sweet onions, diced
  • 6-8 large flour tortillas
  • - canola oil

How To Make chicken chimichangas

  • Step 1
    Mix shredded chicken with sour cream and diced onions.
  • Step 2
    Warm flour tortillas for easier rolling. Place about 2 tbl of cheddar cheese in center of tortilla, add about 1/4 c of chicken mixture. Fold in sides, then roll up, secure with toothpick if desired. Cook in 2 inches of hot oil till tortilla is browned. Remove, add any topping desired.
