chicken chimichangas
Found on "Mexican Recipes to Learn & Share" Facebook page and shared to a recipe group I joined. My family loved this recipe and asked for more. I comfortably fed my family of 5 with this recipe (only two of us had seconds) as is but am choosing to double for the next time so that I can have a few left overs.

Ingredients
- 8 ounces cream cheese
- 1 cup shredded cheese of choice
- 1 1/2 tablespoons taco seasoning
- 1 pound cooked chicken, shredded
- 8 flour tortillas
How To Make chicken chimichangas

Step 1***Can substitute Gluten Free tortillas if you choose. I use Mission Gluten Free Flour Tortillas for my portion.***

Step 2Stir together cream cheese, taco seasoning, and shredded cheese - until no clumps of seasoning. Fold in Chicken

Step 3Spray bottom of 9x13 baking dish

Step 4Divide chicken mixture between all tortillas, fold in all sides and place seam down in the baking dish. Spray tops of tortillas with more spray

Step 5Bake @ 350 degrees for 15 minutes turn over each chimi, return to over and BAKE another 15 minutes.

Step 6Serve seam side down with your favorite taco night sides. We love the Cilantro Lime Rice recipe from Ree Drummond, refried beans, salsa, sour cream, and guacamole.
