chicken chili lasanga
Found this on another recipe site, cooking.com, the other day...made it for dinner guests and they all loved it! And asked for the recipe...then ya know its good! :o) It's kinda rich, but so creamy and flavorful, mmmmm

Ingredients
- 1 medium onion, chopped
- 1 - 8 ounces pkg of cream cheese, softened
- 8 - green onions, chopped
- 2 cups mexican cheese, shredded and divided (the mexican fiesta cheese works well too)
- 2 cloves garlic, minced
- 3/4 teaspoon cumin, divided
- 1 teaspoon cilantro, fresh and minced (i used a tablespoon)
- 3 cups chicken, cooked and shredded
- 1/4 cup butter
- 1/4 cup flour
- 1 1/2-2 cups chicken broth
- 1 cup monterey jack cheese, shredded
- 1 cup sour cream
- 1 - 4 ounces can green chiles, drained and chopped (wouldn't need to drain them)
- 1/4 teaspoon thyme, dried
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 - 6 - flour tortillas, halved
How To Make chicken chili lasanga

Step 1In a bowl combine cream cheese, onion, green onions, 1 1/2c mexican cheese, garlic, 1/4t cumin and cilantro. Stir in chicken, set aside.

Step 2In a med-large saucepan, melt butter, stir in flour til smooth, gradually add in broth, whisking/stirring as you go. Bring to a boil, cook and stir 2 minutes or until thickened. Remove from heat, stir in Monterey Jack cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin.

Step 3Spread 1/2c or so of the cheese sauce into a greased 9x13. Top with 6 torilla halves, 1/3 of the chicken mixture and 1/4 of the cheese sauce. Repeat with torilla, chicken and cheese sauce layers twice. Top with remaining torillas, cheese sauce and remaining mexican cheese.

Step 4Cover with foil and bake at 350 for 30 minutes, uncover and bake another 10 minutes or until heated completely through. Let stand 5 minutes before cutting. When I serve this I put 1/4c salsa down on the plate, sat the piece of lasagna on top of salsa and then, for garnish I sprinkled chopped green onions over top. MMMMMMMmmm *I didn't do the fancy garnish in the photo...due to that being leftovers the next day, since I forgot to take a photo the day of...lol
