Ingredients

  • 1 tablespoon oil
  • 1 medium onion, chopped
  • 2 - garlic cloves, crushed
  • 1 cup chicken, cooked and diced
  • 8 ounces corn, frozen
  • 2 ounces black olives, sliced
  • 2 ounces green chiles, diced
  • 1/4 teaspoon red pepper flakes
  • 4 large bell peppers, colors of choice
  • 1 cup jack cheese, grated

How To Make chicken-chili casserole

  • Step 1
    Preheat oven to 350.
  • Step 2
    Cook onions and garlic in oil until soft.
  • Step 3
    Turn off heat; mix in chicken, corn, olives, chiles and pepper flakes.
  • Step 4
    Remove tops from bell peppers, then slice in half lengthwise, remove seeds and membranes and arrange around edge of casserole.
  • Step 5
    Add cheese to chicken mixture and move immediately to casserole; bake 45 minutes.
