Ingredients

  • 1 Tbsp
    oil
  • 1 medium
    onion, chopped
  • 2
    garlic cloves, crushed
  • 1 c
    chicken, cooked and diced
  • 8 oz
    corn, frozen
  • 2 oz
    black olives, sliced
  • 2 oz
    green chiles, diced
  • 1/4 tsp
    red pepper flakes
  • 4 large
    bell peppers, colors of choice
  • 1 c
    jack cheese, grated

How to Make Chicken-Chili Casserole

Step-by-Step

  1. Preheat oven to 350.
  2. Cook onions and garlic in oil until soft.
  3. Turn off heat; mix in chicken, corn, olives, chiles and pepper flakes.
  4. Remove tops from bell peppers, then slice in half lengthwise, remove seeds and membranes and arrange around edge of casserole.
  5. Add cheese to chicken mixture and move immediately to casserole; bake 45 minutes.
