Ingredients
- 1 tablespoon oil
- 1 medium onion, chopped
- 2 - garlic cloves, crushed
- 1 cup chicken, cooked and diced
- 8 ounces corn, frozen
- 2 ounces black olives, sliced
- 2 ounces green chiles, diced
- 1/4 teaspoon red pepper flakes
- 4 large bell peppers, colors of choice
- 1 cup jack cheese, grated
How To Make chicken-chili casserole

Step 1Preheat oven to 350.

Step 2Cook onions and garlic in oil until soft.

Step 3Turn off heat; mix in chicken, corn, olives, chiles and pepper flakes.

Step 4Remove tops from bell peppers, then slice in half lengthwise, remove seeds and membranes and arrange around edge of casserole.

Step 5Add cheese to chicken mixture and move immediately to casserole; bake 45 minutes.
