THIS IS A COMFORT DISH I MAKE WEN WEATHER IS GETTN COLD....FILLN N TASTY :)

Ingredients

  • 2 large chicken breasts, boneless n cubed
  • 1 cup colored peppers, choppd (i used yellow n red)
  • 1 large onion, choppd
  • 1 can crushed tomatoes, 28 oz.
  • 2 cans beans, any kind (i used cannellini n chili beans)
  • 1 can green chilis, choppd 4oz.
  • 1 cup chicken broth
  • 2 cloves garlic, grated
  • 1 teaspoon chili powdr
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • - cilantro n shredd cheddar chs, optional

How To Make chicken chili

  • Step 1
    IN A LARGE PAN SAUTÉ ONION N COLORD PEPPERS IN OLIVE OIL UNTIL ONIONS SOFTEN, 3 MINUTES. ADD CHICKEN N COOK FOR 5-7 MINUTES. ADD CHOPPD CHILIS, GARLIC, CHILI POWDER, CUMIN N SALT.
  • Step 2
    DRAIN BEANS N ADD TO PAN STIR .
  • Step 3
    ADD CRUSHD TOMATOES N CHICKEN BROTH...STIR N COVER SIMMER FOR 20 MINUTES. (AT THIS POINT I ADDED A ROASTED JALAPEÑO, CHOPPD....WE LIKE THE HEAT)
  • Step 4
    SERVE ON PASTA OR RICE...OR DELICIOUS AS IS! TOP WITH CHOPPD CILANTRO N OR SHREDD CHEDDAR CHEESE......... ENJOY :)
