My sister-in-law made for Christmas Eve and it was a hit with the whole family. I've made many times. It also freezes well.

2 1/2 c
1 tsp
lemon pepper
1 tsp
chicken breasts, cubed
1 tsp
olive oil
1 clove
garlic, minced
1 c
chopped onion
2 can(s)
white shoepeg corn (drained)
1 can(s)
diced green chiles, small
2-3 Tbsp
lime juice
2 can(s)
great northern beans (undrained)
salt, peper and garlic to taste
chopped fresh cilantro
shredded mozzarella

How to Make Chicken Chili


  • 1In a large saucepan combine: water, lemon pepper and cumin. Bring to a boil over medium heat. Add chicken. Reduce heat to low. Cover and simmer 20-30
  • 2In skillet heat oil and saute garlic one minute. Add garlic to chicken mixture.
  • 3Add onions, corn, green chiles, and lime juice and bring to a boil.
  • 4Add beans and cook until heated through. Top with shredded mozzarella and cilantro. Serve with tortilla chips.
