My sister-in-law made for Christmas Eve and it was a hit with the whole family. I've made many times. It also freezes well.

Ingredients

  • 2 1/2 cups water
  • 1 teaspoon lemon pepper
  • 1 teaspoon cumin
  • 4 - chicken breasts, cubed
  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 1 cup chopped onion
  • 2 cans white shoepeg corn (drained)
  • 1 can diced green chiles, small
  • 2-3 tablespoons lime juice
  • 2 cans great northern beans (undrained)
  • - salt, peper and garlic to taste
  • - chopped fresh cilantro
  • - shredded mozzarella

How To Make chicken chili

  • Step 1
    In a large saucepan combine: water, lemon pepper and cumin. Bring to a boil over medium heat. Add chicken. Reduce heat to low. Cover and simmer 20-30 minutes.
  • Step 2
    In skillet heat oil and saute garlic one minute. Add garlic to chicken mixture.
  • Step 3
    Add onions, corn, green chiles, and lime juice and bring to a boil.
  • Step 4
    Add beans and cook until heated through. Top with shredded mozzarella and cilantro. Serve with tortilla chips.
