My sister-in-law made for Christmas Eve and it was a hit with the whole family. I've made many times. It also freezes well.

Ingredients

  • 2 1/2 c
    water
  • 1 tsp
    lemon pepper
  • 1 tsp
    cumin
  • 4
    chicken breasts, cubed
  • 1 tsp
    olive oil
  • 1 clove
    garlic, minced
  • 1 c
    chopped onion
  • 2 can(s)
    white shoepeg corn (drained)
  • 1 can(s)
    diced green chiles, small
  • 2-3 Tbsp
    lime juice
  • 2 can(s)
    great northern beans (undrained)
  • ·
    salt, peper and garlic to taste
  • ·
    chopped fresh cilantro
  • ·
    shredded mozzarella

How to Make Chicken Chili

Step-by-Step

  1. In a large saucepan combine: water, lemon pepper and cumin. Bring to a boil over medium heat. Add chicken. Reduce heat to low. Cover and simmer 20-30
    minutes.
  2. In skillet heat oil and saute garlic one minute. Add garlic to chicken mixture.
  3. Add onions, corn, green chiles, and lime juice and bring to a boil.
  4. Add beans and cook until heated through. Top with shredded mozzarella and cilantro. Serve with tortilla chips.
