My sister-in-law made for Christmas Eve and it was a hit with the whole family. I've made many times. It also freezes well.

Ingredients
- 2 1/2 cups water
- 1 teaspoon lemon pepper
- 1 teaspoon cumin
- 4 - chicken breasts, cubed
- 1 teaspoon olive oil
- 1 clove garlic, minced
- 1 cup chopped onion
- 2 cans white shoepeg corn (drained)
- 1 can diced green chiles, small
- 2-3 tablespoons lime juice
- 2 cans great northern beans (undrained)
- - salt, peper and garlic to taste
- - chopped fresh cilantro
- - shredded mozzarella
How To Make chicken chili

Step 1In a large saucepan combine: water, lemon pepper and cumin. Bring to a boil over medium heat. Add chicken. Reduce heat to low. Cover and simmer 20-30 minutes.

Step 2In skillet heat oil and saute garlic one minute. Add garlic to chicken mixture.

Step 3Add onions, corn, green chiles, and lime juice and bring to a boil.

Step 4Add beans and cook until heated through. Top with shredded mozzarella and cilantro. Serve with tortilla chips.
