Ingredients

4-5 mediumchicken breasts, boneless and skinless

1 pkgyellow rice
-
1 can(s)rotel tomatoes
-
1 can(s)corn
-
3 Tbspolive oil
-
1 can(s)nacho cheese soup
How to Make Chicken Cheesy Fiesta
- I boil my chicken with seasoning and the olive oil for about 15 min, strain and slice into bite sized pieces. Set aside. (The olive oil makes the chicken so tender!)
- Prepare yellow rice according to instructions. In skillet, add chicken, rotel, corn (strained), cheese soup (with can of water), and heat on high for ten minutes, stirring occasionally.
- Simmer for another 10-15 minutes. Serve mixture over yellow rice. *I served green beans as a side, but black beans would be awesome with this dish as well!)
