Ingredients
- 4-5 medium chicken breasts, boneless and skinless
- 1 package yellow rice
- 1 can rotel tomatoes
- 1 can corn
- 3 tablespoons olive oil
- 1 can nacho cheese soup
How To Make chicken cheesy fiesta

Step 1I boil my chicken with seasoning and the olive oil for about 15 min, strain and slice into bite sized pieces. Set aside. (The olive oil makes the chicken so tender!)

Step 2Prepare yellow rice according to instructions. In skillet, add chicken, rotel, corn (strained), cheese soup (with can of water), and heat on high for ten minutes, stirring occasionally.

Step 3Simmer for another 10-15 minutes. Serve mixture over yellow rice. *I served green beans as a side, but black beans would be awesome with this dish as well!) Enjoy!!
