A yummy and quick way to spice things up a little with chicken! My family loved this!

  • 4-5 medium
    chicken breasts, boneless and skinless
  • 1 pkg
    yellow rice
  • 1 can(s)
    rotel tomatoes
  • 1 can(s)
  • 3 Tbsp
    olive oil
  • 1 can(s)
    nacho cheese soup

How to Make Chicken Cheesy Fiesta


  1. I boil my chicken with seasoning and the olive oil for about 15 min, strain and slice into bite sized pieces. Set aside. (The olive oil makes the chicken so tender!)
  2. Prepare yellow rice according to instructions. In skillet, add chicken, rotel, corn (strained), cheese soup (with can of water), and heat on high for ten minutes, stirring occasionally.
  3. Simmer for another 10-15 minutes. Serve mixture over yellow rice. *I served green beans as a side, but black beans would be awesome with this dish as well!)
