I cant remember where I got this recipe from, but it is very filling and good.

Ingredients

  • 8
    manicotti shells
  • 1 c
    cooked chicken (cubed or shredded)
  • 1 1/2 c
    shredded mozzarella cheese
  • 3/4 c
    cottage cheese
  • 3/4 c
    ricotta cheese
  • 1/3 c
    parmesan cheese
  • 1
    egg well beaten
  • 1/4 c
    snipped parsley
  • 1 tsp
    salt
  • 1 Tbsp
    black pepper
  • 1
    jar favorite spaghetti sauce or 2 cups homemade

How to Make Chicken Cheese stuffed Manicotti

Step-by-Step

  1. Preheat oven to 350 degrees. Cook manicotti according to package directions. Drain.
  2. Combine 1/2 cup mozzarella cheese, all the cottage cheese, ricotta cheese, and parmesan cheese. Stir in egg, and parsley. Mix chicken into mixture.
  3. Pour 1/3 cup of sauce into 13x9 baking dish. Open shells and fill with cheese mixture using about 1/4 cup each. Arrange in baking dish. pour remaining sauce over the top. Sprinkle with the remaining mozzarella. Bake uncovered at 350 until bubbly and heated through about 35 minutes. Serves 4
