MY FAMILY'S FAVORITE CASSEROLE. IT FEEDS 4-6 PEOPLE. YOU CAN ADJUST THE CHEESE AND ROTEL CONTENT TO YOUR FAMILY'S LIKES.

Ingredients

  • 4 large chicken, boneless and skinless
  • 1 package pasta of choice
  • 1 can rotel
  • 1 can cream of chicken or mushroom soup
  • 1 - onions, yellow, medium
  • 8 ounces velveeta cheese
  • - salt and pepper
  • 1 package *optional*broccoli, cauliflower and/or carrots

How To Make chicken casserole

  • Step 1
    put pasta in pan to boil until almost done. boil chicken until done then cut into bite-sized pieces.
  • Step 2
    mix soup, veggies*, onion, rotel & half the velveeta(cubed) into a casserole dish.
  • Step 3
    when chicken is done, add to mixture in casserole dish.
  • Step 4
    when pasta is almost done, drain all water & add to mixture in casserole dish.
  • Step 5
    stir together well. take the other half of the velveeta(cubed) and place on top of mixture. spread pieces out evenly.
  • Step 6
    place dish in oven and broil until top of mixture is covered with melted cheese. you can also do this in the microwave.
  • Step 7
    *if using veggies such as raw broccoli, cauliflower or carrots, you must first blanch them before adding to casserole dish.
