Could not find the recipe I was looking for, so contrived this one, using what I had on hand. Real simple, but tasty. I used left over chicken from a grocery store roast. I'm sure you could subsitute tuna, if that's your desire, instead of chicken.

Ingredients

3 c
dry elbow macaroni
1 can(s)
cream of mushroom soup
1/2 c
mayonnaise
1/2 c
milk
1/2
onion, chopped
1/2
bell pepper, chopped
1 c
shredded cheddar cheese
3 c
cooked chicken, small pieces
1 can(s)
fried onion rings
salt and pepper to taste
1/4 c
chopped green olives

Step-By-Step

1Pre-heat oven to 350 degrees
2Cook macaroni according to directions on box. Drain and set aside
3Saute onions and bell pepper in a bit of olive oil until tender and translucent
4In a large mixing bowl, mix macaroni, onion,bell pepper,olives, soup, milk, mayo, chicken and half of the cheese. Salt and pepper to taste. Blend well.
5Spray a casserole dish and pour in mixture (you can use two smaller dishes and freeze one). Cover with foil and bake for 25-30 minutes or until bubbly
6Remove foil and sprinkle other half of cheese and all of onion rings on top. Return to oven and bake an additional 10 minutes
