chicken casserole

Could not find the recipe I was looking for, so contrived this one, using what I had on hand. Real simple, but tasty. I used left over chicken from a grocery store roast. I'm sure you could subsitute tuna, if that's your desire, instead of chicken.

Ingredients
- 3 cups dry elbow macaroni
- 1 can cream of mushroom soup
- 1/2 cup mayonnaise
- 1/2 cup milk
- 1/2 - onion, chopped
- 1/2 - bell pepper, chopped
- 1 cup shredded cheddar cheese
- 3 cups cooked chicken, small pieces
- 1 can fried onion rings
- - salt and pepper to taste
- 1/4 cup chopped green olives
How To Make chicken casserole

Step 1Pre-heat oven to 350 degrees

Step 2Cook macaroni according to directions on box. Drain and set aside

Step 3Saute onions and bell pepper in a bit of olive oil until tender and translucent

Step 4In a large mixing bowl, mix macaroni, onion,bell pepper,olives, soup, milk, mayo, chicken and half of the cheese. Salt and pepper to taste. Blend well.

Step 5Spray a casserole dish and pour in mixture (you can use two smaller dishes and freeze one). Cover with foil and bake for 25-30 minutes or until bubbly

Step 6Remove foil and sprinkle other half of cheese and all of onion rings on top. Return to oven and bake an additional 10 minutes
