This is an easy recipe that my family LOVES. I serve it with my homemade yeast rolls (recipe is posted). **You can also add a package of frozen mixed vegetables or a can of mixed vegetables (drained) to the casserole as well!

Ingredients

  • 1 - whole chicken
  • 1 can (large can) cream of chicken soup
  • 2 boxes chicken flavored stuffing mix

How To Make chicken casserole

  • Step 1
    In a large dutch oven, cook chicken until done. Remove from water (strain and save water for the stuffing mix). Let chicken cool until easy to handle. Heat oven to 350. Shred chicken, adding it to a 13X9X2 inch pan. Pour cream of chicken soup over the chicken. Using a large spoon, mix well, spreading the mixture over the bottom of the pan. In a large bowl, add both boxes of stuffing mix and seasoning packets, butter/margarine (amount according to package directions) and the strained hot water that you saved (check package directions for water amount). Don't heat the water, butter and seasoning as directed on the package. Stir well. Let stuffing mix sit for about 5 mins. until bread crumbs have absorbed the water. Spread over the chicken and soup mixture. Bake for 20 minutes, until stuffing is browned and the soup mixture is nice and bubbly. Enjoy!
